Pairing Recommendation: Vegetable risottos, fish dishes (crudo and cooked), fish carpaccio and spicy white meat dishes.

Vinification: Exclusively handpicked grapes. Fermentation - Chardonnay: 70 % in stainless steel / 30% in large oak barrels. Rebula & Sauvignonasse: 100 % in stainless steel. Rebula and Sauvignonasse mature in stainless steel tanks, sur lie for 6 months Chardonnay: 70% matures in stainless steel / 30% large oak barrels. Does not undergo malolactic fermentation.
